After Indians began migrating to the US, the Indians began spread the flavour their food there also. But for the average US eater, the Indian food was too spicy due to heavy usage of oil and spices. Also there were cleanliness and hygiene issues at Indian eateries. To overcome these, the Indians living there gradually came up with cleaner and hygienic restaurants. The standards were raised and more emphasis was given to the ambience and interiors. These changes led the Americans to explore these restaurants in large numbers to get the flavour of Indian cuisine and the feel of the restaurants. Here, a concept of ‘fusion food’ arose, where local ingredients were used to cook food the traditional Indian way. This appealed to all the taste buds. Indian cuisine gained universal popularity from irresistible dishes such as chicken curry’ and ‘chicken tikka masala’, which have been topping the popularity charts. A survey in UK claims that the ‘chicken curry’ is the most popular restaurant dish .One in seven curries sold in the UK is chicken tikka masala. Other cuisines which are influenced from India include the Vietnamese cuisine, Indonesian and Thai. The reality show ‘Big Brother’ added on to the popularity of Indian food with Indian actress Shilpa Shetty preparing the famous “Chicken Curry”. This created raves in UK after she won the show and made every English want for more and more of the Indian Curry.
